Obatzda with Pears and Croutons
Makes 4 servings
Ingredients for the Croutons:
- 2 Slices of White bread
- 3 tbsp. butter
- 2 tbsp. oil
Ingredients for the Obatzda (spicy cheese mix):
- ½ Ripe firm pear
- 5 Green onions
- 9 oz. (250 g) Ripe Camembert (at room temperature)
- 9 oz. (250 g) Cream Cheese
- 3-4 tbsp. cream
- 2 tbsp. Williams Pear Brandy
- Salt
- Cayenne Pepper
- Ground caraway seeds
- Brown butter
Instructions:
1. For the croutons: Remove the crust from the white bread and cut bread slices with a sharp knife once more lengthwise. Cut the bread slices into 0.2 inch (5mm) thin strips and then into the smallest possible cubes. Heat butter and oil in a skillet and brown the bread cubes over medium heat until light brown. Drain on paper towel.
2. For the Obatzda: Peel pear, core and dice finely. Clean, wash and cut the green onions into thin slices.
3. Cut the Camembert into small pieces and stir in a bowel with cream cheese, cream and Williams Pear Brandy until creamy. Fold in pear cubes and green onions. Season the Obatzda with salt, a pinch of cayenne pepper and caraway seeds, and some brown butter.
4. To serve, fill a bowl with the Obatzda and spread croutons on top. According to taste, serve with radishes, bread, pretzels or whole grain rolls.
Pro tip: It is easier to cut the bread into small pieces if the bread slices are somewhat frozen.
